Mixed nuts moon cake

  

  AMONG all the moon cakes, mixed nuts moon cake is one of the most popular traditional moon cakes. It’s healthy and easy to make too. Below is a recipe for homemade mixed nuts moon cake.

  We will focus on the filling, as moon cake outer shells are virtually all the same.

  Method:

  Combine all the ingredients except the glutinous rice flour in a mixing bowl.

  <2022>125g of toasted walnuts, chopped coarsely

  <2022>100g of toasted almonds

  <2022>75g of toasted olive kernels

  <2022>100g of toasted melon seeds

  <2022>75g of candied mandarin, chopped

  <2022>100g of crystallized candied melon, chopped

  <2022>100g of toasted sesame seeds

  <2022>150g of icing sugar

  <2022>2 tbsp of brandy

  <2022>1/4 tbsp of dark soy sauce

  <2022>90ml of cold boiled water
