Pork rib soup with mussels
淡菜排骨汤
Ingredients:
480g pork ribs cut into pieces; 10 red dates, cored; 80g each of dried hyacinth beans and dried mussels; 2 slices ginger; 1 spring onion; 320g potatoes; 1 carrot.
Method:
1. Wash hyacinth beans and red dates clean.
2. Soak mussels for 30 minutes and wash clean.
3. Pour 1 spoon of oil in, sauté ginger, onion and mussels in turn for a while, add adequate water to bring to boil, drain and discard ginger and onion.
4. Boil pork ribs for 5 minutes, remove and wash clean.
5. Skin potatoes and carrot, wash clean and cut into pieces.
6. Bring 12 cups (or adequate amount) of water to boil, simmer hyacinth beans, mussels, potatoes, carrot, red dates, pork ribs and 1 slice of ginger for 3 hours and add salt.
