Dish of the week

Steamed grey mullet with orange peel sauce
橙皮香酱蒸乌头
Ingredients:
1 grey mullet (480g); 1 orange; 2 tablespoons ground fermented beans; 0.5 tablespoon chopped garlic; 1 red chili, cut into pellets; 2 spring onions, cut into pellets; 1 tablespoon oil.
Marinade:
A dash of pepper; 1 teaspoon tapioca starch.
Method:
1. Wash orange clean, peel half of it, chop part of peel and shred the other part.
2. Paunch mullet, wash clean, wipe dry and apply marinade evenly onto belly and skin.
3. Mix beans, chopped orange peel, red chili and garlic with oil, place on fish, steam for 10 minutes until cooked and add onions and orange peel shreds.
4. Bring adequate oil to boil, pour over fish and sprinkle a dash of light soy sauce.(SD-Agencies)
