Stir-fried conch meat slices with celery
西芹炒螺片
Ingredients: 1 box frozen conch meat slices (螺片) (about 250g); 150g celery (西芹); 1tsp (teaspoonful的缩写,一茶匙) minced garlic; 1/2 tsp minced ginger; 1 green onion, cut into sections.
Marinade: 1 tbsp (tablespoonful的缩写,一汤匙,相当于3茶匙容量) each of ginger juice and Shaoxing wine; 1 tsp corn flour; a little pepper.
Seasonings: 4 tbsp broth (or water); 1/4 tsp salt; 1/3 tsp each of sugar and corn flour; one and 1/2 tsp light soy sauce; a little sesame oil, pepper and Shaoxing wine.
Method:
1. Remove the tough strings of the celery, wash and cut into small wedges, lightly deep-fry in hot oil, drain well and set aside.
2. Defrost the conch meat slices, rinse slightly and pat dry. Put in the marinade, stir well, lightly deep-fry in oil, drain.
3. Heat 2 tbsp of oil to saute the minced garlic, ginger and green onion, return the conch meat slices to the wok, sprinkle wine and then add the rest of the seasonings with the celery, stir-fry until it is cooked. Serve hot.
Note: You can also stir-fry the celery with a little oil, salt and sugar, arrange it nicely on a serving plate, then put the cooked conch meat slices on top.
