Deep-fried pork spareribs with plum sauce
梅酱酥骨
Ingredients:
450g pork spareribs; 3tbsp plum sauce; a little shallot (葱) slices
Marinade:
one and a half tbsp light soy sauce; a little pepper and Shaoxing wine
Seasonings
1 tsp light soy sauce; 1/2 tbsp chicken paste; 2 tbsp water
Method:
1. Cut the spareribs into rectangular pieces, blanch and drain well, then pat dry with a clean cloth.
2. Add the marinade to the spareribs, then lightly dust (撒上) with corn flour, deep-fry in hot oil until done. Remove from heat and drain well
3. Heat 1/2 tbsp oil to saute the shallot slices, add the plum sauce and the seasonings. Stir well and put in the spareribs. When the spareribs are coated with the sauce, dish (装盘) and serve hot.
